Let’s talk about something heart-healthy, tasty and pretty, – delicious Raw Chia Seed Pudding with Banana, Mango and Pineapple Coulis. Serve it up as a beautiful parfait for breakfast or any other time of the day or night. It is the perfect way to get the daily requirement of fiber and omega-3.

Salvia Hispanica is the name of the chia plant, which is a member of the mint family. They produce small blue flowers and the seeds have been used as food for thousands of years. It was a staple food of the Aztecs and Mayans who ground the seeds into flour or pressed it for oil. It was also used for medicinal purposes such as joint pain and an energy booster for stamina for the ancient warriors.

The chia seed is considered a super food because it provides maximum nutrients with minimum calories.

Chia seeds are loaded with omega-3, high quality proteins, minerals, fiber and antioxidants. It has high levels of vitamin B, which contributes to increased metabolism, healthy skin and muscles. It also regulates the absorption of sugar in the blood making it the perfect fiber for those with diabetes.

Chia seeds are also gluten-free. They make an exceptional egg replacer when baking and helps reduce cholesterol and can increase the nutrient content of foods. Great for vegans! The high content of antioxidants not only protect the body from aging, cancer and free radicals, but it helps chia seeds last longer on the shelf!

Today was incredibly hot, so the bananas, mangoes and pineapple I froze came in handy. You just blend it all with splash of almond milk and layer with the raw chia seed pudding. Of course, you are welcome to be creative and try different fruits and berry combinations. Try adding cinnamon, nutmeg or any other spices you like.

Raw chia pudding
  1. 2 cups raw almond milk
  2. 1/2 cup chia seeds
  3. 2 tablespoons pure maple syrup (raw honey, or agave)
  4. 1/4 teaspoon pure vanilla extract (optional)
Fruit coulis
  1. 1 cup frozen bananas
  2. 1 cup frozen mango
  3. 1 cup frozen pineapple
  4. Splash of almond milk
Instructions
  1. Combine chia seeds and almond milk. Let it sit 2 hours to overnight in the refrigerator.
  2. Add maple syrup, or your favorite sweetener (optional). Mix well.
  3. Blend frozen fruits with a splash of almond milk to help combine the ingredients.
  4. Alternate layers of fruit coulis and chia seeds into a glass or serving dish.
