You know those moments when someone talks about a movie or a song they want you to see or hear, and you get excited about it, but forget the name and never actually watch it? That is unless they actually give it to you whether it’s a DVD or a link. It was the case with the Red Lentil Mushroom Masala with Coconut Cream. Chipotle and I talked about it. She sent photos and described the recipe the same evening she made it. But, like the movie or song someone recommends, I put it aside and forgot about it. And even if I had the recipe, I would have still put it aside because I am currently lacking certain key ingredients this recipe calls for. However, everything changes when you get a package by mail with all the things you need for a recipe. About a week later I received such a package.

This package was filled with almost everything I need to make the dish. It was neatly packed with perfect little bags of spices, all beautifully labeled, along with red lentils, basmati rice, and the coconut cream. That’s amazing if you ask me. So, along with my box of goodies and a print out of the recipe with adorable comments, I had no choice but to make it. What a treat this was! The house quickly filled up with cozy aromatic smells; the kitchen became bright and colorful as the spices themselves. We decided we had to share it with you.

Red Lentil Mushroom Masala with Coconut Cream is easy to make and one of our favorite comfort foods now. Healthy? Yes.

Lentils are the dried seeds of legumes, which are called pulses. Other pulses include chickpeas, dried peas, and dried beans. They are popular in the Middle East and India where many varieties grow. They are delicious and rich in protein, fiber, and minerals, and contain virtually no fat. This makes lentils one of our favorite vegan proteins.

Brown lentils are the most popular sold in the U. S. and are soft. They do not hold their shape, but will add a wonderful thickness to stews and soups.

Green and French Le Puy lentils retain their shape and are perfect for salads or a side dish. Simply tossed them with fresh herbs, extra-virgin olive oil, lemon and sea salt and fresh ground pepper. Puy lentils come from the beautiful region of Le Puy in France, and they are known for a robust, hearty flavor.

Black or beluga lentils are small and round, unlike other common lentils, which are lens-shaped. Beluga lentils become shiny when cooked, which makes them look like caviar, hence the name. They are similar to the Puy lentils in that they retain their shape and add wonderful color and texture to salads and sides.

Red and yellow lentils are split with their skins are removed. Hulled, split lentils are called dal, or dal, and used to make thick stews, which are an important part of Indian, Pakistani, Bangladeshi, and Nepali cuisine. Served with rice and chapati, roti or papad, the soft and creamy dal stew is a staple meal in South Asia.

Lentils are popular among vegetarians and vegans because they are high in protein and packed with minerals. They have a rich, earthy flavor and works well in many dishes. Lentils are also a wonderful meat replacement for vegetarian and vegan meals. Try a lentil burger, a vegan chili, or lentil and mushroom meatballs for a new twist on some old favorites.

There are many benefits to incorporating lentils into your diet. Because they are small, it only takes about 20-25 minutes to cook firm, but tender. You can also cook them until they break down completely, for texture or for thickening, about 40-45 minutes.

Lentils can be sprouted then eaten raw. Grind the sprouted lentils into a meal in a food processor to make patties. Cook lightly or dehydrate them in a dehydrator.

Ingredients
  1. 1 cup red lentils
  2. 2 cups mushrooms
  3. 1 medium tomato
  4. 1 medium onion
  5. 2 tablespoons tomato paste
  6. ½ can coconut cream
  7. 1 bay leaf
  8. 1 tablespoon coriander seeds
  9. ½ tablespoon garam masala
  10. ½ teaspoon cumin seeds
  11. ½ teaspoon kasuri methi
  12. ½ tablespoon turmeric
  13. 1/3 teaspoon red chili powder (optional)
  14. 1/3 cup cilantro
  15. 1 tablespoon coconut oil
  16. 3 cups water, more if necessary
  17. Sea salt and fresh ground pepper, to taste
Instructions
  1. Heat the coconut oil and add the coriander seeds, garam masala, cumin, turmeric, red chili powder. Fry about 1 minute.
  2. Add chopped onions. Cook them until golden brown.
  3. Add the mushrooms and cook until all the moisture is gone. On medium-high heat let them caramelize a little for more flavor. Do not burn the spices.
  4. Add the red lentils and sauté for a minute with the spices and onions.
  5. Add chopped tomatoes.
  6. Add tomato paste and incorporate it thoroughly into the lentil and onion mixture.
  7. Add the bay leaf, kasuri methi.
  8. Add water. Add more, if needed, as the lentils cook, about 20-25 minutes. We like a medium soup consistency, not too thick.
  9. Add sea salt and fresh ground pepper to taste.
  10. Add the coconut cream and cilantro and stir well. Let it heat up then turn the fire off.
Notes
  1. Serve with good quality basmati rice, naan, and pickled mangoes.

Ingredients
  1. 1 стакан красной чечевицы
  2. 2 стакана шампиньонов
  3. 1 крупный помидор
  4. 1 средняя луковица
  5. 2 столовые ложки томатной пасты
  6. 1/2 банки кокосововых сливок
  7. Пучок кинзы
  8. 1, 2 лавровых листа
  9. 1 ст. л. семян кориандра
  10. ½ ст. л. куркумы
  11. ½ ч. л. кумина
  12. ½ ч. л. гарам массалы
  13. ½ ч. л. шамбалы
  14. 1/3 ч. л. красного молотого перца (не обязательно)
  15. 1, 2 ст. л. кокосового масла для жарки (оливкового)
  16. 3 стакана воды (возможно понадобится больше)
  17. Соль, черный перец по вкусу
Instructions
  1. Разогреть кокососовое масло, добавить куркуму, кориандр, кумин, гарам масалу, красный молотый перец.
  2. Через минуту добавить лук, готовить до золотистого цвета.
  3. Добавить грибы и готовить на высоком огне пока вся влага не испарится.
  4. Затем добавить чечевицу
  5. Еще через минуту добавить помидоры, жарить несколько минут.
  6. Теперь пора добавить томатную пасту, лавровый лист и шамбалу.
  7. Залейте все водой и готовьте примерно 20-25 минут на не большом / среднем огне, добавляя при надобности воду, до тех пор, пока чечевица не разварится.
  8. Посолите и поперчите по вкусу.
  9. Добавьте кокосовые сливки, кинзу. Через минуту все готово.
Notes
  1. Подавайте с рисом басмати, индийским хлебом.
