Chili Butter Shrimp can be served as a skewered appetizer or as a main dish.

Many people wonder what is the proper way to prepare shrimp, so they are not chewy or mushy, but cooked perfectly every time. Shrimp are delicate and there are few things you must know to nail your cooking performance.

Make sure you clean the shrimp thoroughly. After it is thawed or if you bought it fresh, cut along the back of the shrimp and pull the black “string” out. This is the intestinal tract of the shrimp, which you wouldn’t taste if you left it, but the idea of it and the texture is not so pleasant. It is easy to peel the rest of the shell if you are not planning to cook it on the grill. Make sure you drain all the water from thawing and pat dry with a paper towel. Otherwise, it will not get a beautiful golden-brown sear in a pan. Grilling the shrimp the is easier with the shell on since it is protecting it from overcooking and sticking to the grill. For shrimp not to fall through the grill we recommend cooking it on skewers. It also helps to flip them.

When cooking in the pan, make sure it is pre-heated, medium-high. It literally takes a few minutes to cook the shrimp through from the “see-through” greyish color to opaque pink. If it curls too much, it means it is overcooked.

Butter and garlic seem to be the most popular flavorings when cooking shrimp. Simple and direct. Add some paprika and cayenne for a little kick and more color. Sprinkle with chopped parsley and you have a perfect side dish or appetizer. Put them on a bed of warm basmati rice for a full meal.
