Chia puddings have become very popular in the last few years. Chia seeds have been considered a superfood for quite some time. There are tons of creative recipes online on how to turn these wonderful tiny seeds into an alternative, dairy-free, pudding or yogurt snack.

Chia seeds are an amazing source of plant-based omega-3 fatty acids, which help raise HDL cholesterol for heart and joint health and has 4 grams of protein per 2 tablespoon serving. It is rich in antioxidants, which help protect the delicate fats in the seeds, and high in fiber too. When mixed with liquid they form a gel-like substance which is similar to the consistency of pudding and yogurt. Chia seeds can also be added to smoothies as well as used in baked items to make bread.

For the longest time, I was a big fan of coconut milk and almond milk, but lately, I have been on a flaxseed and oat milk kick. Oat milk is creamy and thicker than other nut and seeds milk and easy to drink. It is rich with a pleasant flavor that isn’t overpowering like some milk alternatives. That’s what I used for this Matcha Chia Pudding recipe. Add 1 or half a teaspoon of matcha powder, your favorite sweetener and let it sit in the fridge overnight. In the morning mix well, top with berries and sprinkle with hemp seeds. Your super breakfast is ready.
