Soba Noodles with Sesame Seeds

 8 oz Soba Noodles
 2 tbsp Scallions, chopped
 2 tbsp Sesame Seeds, toasted
 2 tbsp Cilantro, chopped
 1 tbsp Soy Sauce
 1 tsp Sesame oil, toasted
 1 tsp Extra-virgin Olive Oil, or butter

Boil water in a pot.

While water is boiling, chop scallions.

Place soba noodles in boiling water and cook for 2-3 minutes.

Strain soba and add rest of the ingredients.

Toss lightly and serve.

Soba means buckwheat in Japanese.

This is a flavorful, light soba noodle dish that can be made in less than 15 minutes. It is gluten-free as long as you find the right pack of soba or make the noodles yourself. This is a vegan soba noodle recipe that can be served hot or cold as a soba noodle salad or side. Our recipe is influenced by Japanese ingredients such as toasted sesame seeds and oils and goes well with many other dishes.

Types of soba:

Cha soba is flavored with green tea powder.
Hegi soba is flavored with seaweed.
Inaka soba means "country soba", which is thick soba made with whole buckwheat.
Jinenjo soba is flavored with nagaimo (wild yam) flour.
Mugi soba is flavored with mugwort.
Nihachi soba is soba containing 20% wheat and 80% buckwheat.
Sarashina soba is thin, light-colored soba, made with refined buckwheat.
Towari soba or Juwari soba is 100% buckwheat soba.
