One of my favorite summer treats is Watermelon and Feta Appetizer.

It is vibrant, flavorful, sweet and salty. All you can dream of in a serving. This watermelon and feta recipe can also be served as a delicious summer salad.

It is summertime!

Feels like just a few weeks ago I was watching my friends and family in Russia, Colorado and New York, posting snowy images Instagram. Several years ago, I decided to cheat the anticipation of summer and moved to sunny, Southern California and haven’t had one thought of regret. No doubt summer is welcomed all over the world and puts a smile on people.

As you know, watermelon is a great hydrant being over 90% water and a cup of watermelon contains less sugar than a cup of berries. It is believed to have originated in Africa. The first recorded harvest was depicted in hieroglyphics on walls of ancient buildings in Egypt over 5,000 years ago.

Did you know watermelon is considered both a fruit and vegetable?

From a botanical perspective, watermelons are considered fruit since they contain seeds. However, it is classified under the botanical family of gourds, like cucumber, pumpkin, and squash. The United States ranks 5th in the world for watermelon production as forty-four states grow it. It is the most-consumed melon in the US. There are hundreds of varieties and there are five types: seeded, seedless, mini, yellow and orange. Watermelons are high in lycopene, which is a compound that is known to reduce the risk of some types of cancer.

Feta, a crumbly, slightly grainy textured cheese, often produced in blocks and kept in brine, has an interesting and deep history. It has been a protected by designation of origin product in the European Union since 2002, meaning it can be only those cheeses produced in a traditional way in a certain part of Greece. It must be made from sheep’s milk but can have up to 30% or less of a goat’s milk from the same area. Only these theses can be called feta. The Greek word feta is derived from feta, meaning “slice” in Italian and offa, a Latin word meaning “a morsel”.

There are classic recipes that are perfect the way they are and this summer appetizer is one of them. All that is needed is a little bit of freshly chopped parsley, black pepper, and high-quality extra-virgin olive oil.  8 oz Feta, cubed
 ¼ cup Parsely, chopped
 2 tbsp Extra-virgin olive oil
 1 pinch Freshly ground black pepper

Slice watermelon and feta into small cubes.
