My recent client had a condition, smallest list of ingredients she could consume and tons of allergies and restrictions. One of the veggies she could eat was zucchini. It’s a pretty clean canvas to work with. I learned to make so many things out of just one ingredient. Different flavors and shapes and ways of preparing this humble vegetable. One of her favorite zucchini dishes become a zucchini croquettes aka fritters.

This zucchini fritter is an easy, fast, healthy recipe, packed with flavor. Luckily these days we have many ways of making dishes healthy, but still delicious. For that reason, I used gluten-free flour, and this recipe takes only 2-3 tablespoons, which is even better.

Zucchini enhances digestion. It can lower blood sugar levels, lower cholesterol, improve diabetes, support heart health, improve eye, skin, and hair, and boost energy. Because it’s low in calories and high in water and fiber, it is a great veggie to include for weight loss. It is also an anti-inflammatory food. Its skin is rich in polyphenols and vitamin C, which means it can improve thyroid and adrenal functions. Cooked or raw zucchini is a beneficial vegetable to add to your menu.

 3 zucchini
 1 egg
 ½ onion
 2 tbsp flour
 1 pinch cumin
 1 tbsp coconut oil
 1 pinch salt
 1 pinch pepper

Grate zucchini into a bowl, add a pinch of salt and let it sit for 5-10 minutes to let the liquid release.

With clean hands squeeze water out of the zucchini until most of the moisture is removed.

Add finely chopped onion, egg, a small pinch of salt, freshly ground black pepper and flour.

Mix well.

Preheat the skillet, add coconut or olive oil and spoon zucchini mixture.
Cook on both sides until golden brown.

 1 egg
 ½ onion
 2 tbsp flour
 1 pinch cumin
 1 tbsp coconut oil
 1 pinch salt
 1 pinch pepper

Directions
